This beef shin recipe shows you how to slow cook a shin of beef cut to give you some delicious tender meat that falls off the bone. In this recipe, I cook the meat in my Dutch oven, but you can also make the same recipe in a crockpot or an Instant Pot.

What is beef shin?

Beef shin or beef shank is a cut of meat from the leg of the heifer or steer. As it comes from the leg, which carries the weight of the animal, the meat is quite tough as it has a fair amount of muscle in the meat, and hence can be quite a cheap cut of meat.

Because beef shank is a tough cut it needs to be slow-cooked to make it tender. I bought these cuts at our local butcher, Kelly's, who are just fantastic.

I recommend you ask your butcher to cut the meat into 3-4cm thick pieces, as they will most likely have some thick bone in them. The butcher will have his own bandsaw to do this I imagine. I would allow one piece of meat per person.

I cooked this meal on the bone as all the goodies from the bones, like the bone marrow, melt into the liquid and get incorporated into the gravy making it even tastier.

How to cook beef shin in the Instant Pot

This recipe is based on using a Dutch oven in the oven. I used my trusty oval Le Creuset cast iron casserole pot (or Dutch oven). But feel free to make it in your slow cooker or crockpot if you prefer.

You can also make this same recipe in the Instant Pot if you want to make it a bit quicker. Just brown the meat using the saute setting on the Instant Pot and cook on high pressure for one hour. And just add the carrots before putting the pot under pressure.

I found that after cooking, the meat came away from the bone, and any muscle and connective tissue that is left, very easily just using a couple of forks. Make sure you just serve up the lean meat though!

The bones went to the dog, who was very happy with them, as he also was with the bone from the leg of lamb I made recently!

If instead, you want to cook this in the oven and need a cast-iron Dutch oven, and if you are on a budget, then Uno Casa have some more affordable ones.

What to serve with beef shin

In these photos, I served the shin of beef with some delicious creamy mashed potatoes and some of the carrots and mushrooms that were cooked with the meat. But you can serve up with any vegetables you like really. The beauty is that the meat tastes wonderful and will go well with most vegetables.

I just think that some creamy buttery mash is the best way to soak up the juices and combine with the meat and carrots.

How to cook beef shin

Ingredients

  • 3 pieces of beef shin (1200g) (use one piece per person)
  • 70g button mushrooms
  • 85g smoked pancetta
  • 1 onion
  • 3 Cloves
  • 4 shallots
  • 4 cloves garlic
  • Salt and Pepper
  • 400ml Beef stock
  • 200 ml Red Wine
  • 1 celery stalk
  • 2 sprigs fresh Rosemary
  • 1 sprig fresh thyme
  • 2 bay leaves
  • 2 large carrots
  • Salt and pepper

For the gravy

  • 1 beef OXO cube
  • 1 tbsp gravy granules

Instructions

  1. Pre-heat the oven to 170C.
  2. Prepare the vegetables: wash and slice the celery, peel the shallots, garlic cloves and carrots. Peel the onion and prick it with the cloves.
  3. Fry the pancetta in a pan and remove to your casserole dish, leaving the fat to brown the beef pieces on both sides.
  4. After browning the beef, season both sides with salt and freshly ground pepper, and place the meat in the casserole.
  5. Then add the celery, shallots, garlic, bay leaves, onion, mushrooms, rosemary and thyme to the casserole dish and finally add the stock and red wine. There should be enough liquid to almost cover the meat.
  6. Cover the casserole with a tight-fitting lid and place in the oven for 3 hours. After 3 hours slice the carrots and add them to the casserole dish. Check the liquid level - if it has dropped too much, top up with some water. Turn over the meat and put the casserole back into the oven.
  7. Cook for one more hour and remove from the oven. Remove the meat from the bones with two forks and keep warm before serving up.

For the gravy

  1. Sieve the liquid into a jug and let it settle. Remove any fat with a ladle. Then use the remaining liquid to make some gravy in a pan, using an Oxo cube and some gravy granules.

Notes

Serve the meat and carrots up with some mashed potatoes and gravy.

If cooking in the Instant Pot then brown the meat on the saute setting before cooking with the rest of the ingredients for one hour on High Pressure setting.

If cooking in a crockpot at a lower temperature, then you will probably want to cook for about 6-8 hours depending on the temperature setting you use.
